After experimenting with a number of divider configurations and materials, it seems like a stainless steel welded assembly will work best. It will be very sturdy and easy to clean while providing good support to the products and temperature sensors.
With welded assemblies, often the cost is high because of the time and skill required to make the joint. This is why many welded assemblies, including the stainless steel cart we are using, are held together by spot welds. These joints are simple to make, require no training, and use a low-cost machine.
